Looking for something to use up your leftovers for Christmas Dinner? Reheating everything for a second meal is all well and good and just as tasty, but it’s repetitive and boring.

We have decided to make a super quick and easy way to use up some of the leftovers, in the glorious form of a grilled cheese sandwich.

In this grilled cheese we used a little aoli to moisten the bread to begin with as well as add a hint of garlic taste, but using mayonnaise, the cranberry sauce or cream cheese works well too – this step is not too essential. Inside we used some leftover roast turkey, a touch of stuffing, cheddar cheese and some emmental (which melts really well). We think a blue cheese would work perfectly with this or a bit of mozzarella if you like your grilled cheese extra gooey.

Ingredients
  1. 2 slices sourdough bread
  2. 2 tsp aoli
  3. 1 tbsp cranberry sauce
  4. 100g sliced roast turkey (approx)
  5. 25g stuffing (approx)
  6. 50g cheddar cheese (approx)
  7. 50g emmental cheese (approx)
  8. 2 tsp butter
Instructions
  1. Start by spreading the aoli on each slice of sourdough, followed by the cranberry sauce
  2. Put the sliced turkey on one slice of bread followed by the cheddar cheese
  3. On the other slice of bread put enough stuffing to evenly cover and top with the emmental cheese
  4. Microwave the bread for about 30 seconds so the cheese begins to melt and sandwich the slices together
  5. Spread the butter on both sides of the sandwich, then put into a hot frying pan. Allow the sandwich to toast for approximately 1 minute on each side till the bread starts to crisp and the cheese melts
  6. Cut in half and enjoy!

Now we have included quantities (sort of), but this recipe isn’t exact – it’s left overs so you can use basically whatever you have in a throw it in sort of way, no need for measurements. We can assure you it’ll taste great no matter what you use. As long as you use some really good bread (we chose a stilton sourdough), some nice cheese and plenty of tasty fillings – some mash potato would make an excellent filling too, plus using left over cheese and chutneys from the Christmas cheeseboard would be a winner!
